
Cooking should be fun
My name is Sam, I’m a retired Chef who continues to cook in my home kitchen for myself and my best friend, Dave. I would love you to join me in my culinary journey.
At 62, I followed a dream to become a qualified Chef. My age was a barrier to finding that all allusive apprenticeship, perseverance and with help someone who could guide me through the pitfalls, I succeeded.
All my life I have followed my dreams which led to a varied choice of careers. From nurse, writer, artist, ceramist, Gallery owner and Manufacturing Pottery Proprietor. Becoming a chef was a final career choice. From time to time it was necessary to return to all my dreams which was lovely. The artist in me was no load to carry, it just sits in the background, moving to the fore as needed. Photography has also been a continuing thread throughout all areas.
My partner and I live in a beautiful part of Australia on the Far North Coast of New South Wales. My home, studio and kitchen are around 2 minutes by car to the nearest beach or river. There are many beaches from which to choose as the weather and mood permits. Ballina is very much a self-contained town, which boasts a large airport that services a much larger area including Byron Bay just up the road to the North and this is where I completed my Chef’s apprenticeship.
My current passion is baking sourdough bread and many of the spin-offs from that. While baking bread is not new to me, I’m finding sourdough using the naturally occurring wild yeast to rise the bread most fascinating.
